种做法是清蒸螃蟹。
烹饪方法:
把买回来的螃蟹用刷子刷干净,然后用绳子把它的腿捆起来,防止它在锅中加热的时候乱爬乱动,导致脚会掉落。
锅中放水,等水煮开过后,用笼把螃蟹装起来,然后把笼放在锅上大火煮15分钟即可。
取一块生姜去皮切丝,把姜丝放入醋盘中,用剪刀剪去螃蟹身上的绳子。
打开螃蟹壳去除螃蟹的肠道,因为螃蟹肠道里有很多的寄生虫,如果不去除的话吃了会拉肚子。
烹饪小提示:因为螃蟹是寒性食物,在醋盘里边放一点生姜可以去除螃蟹的寒性,免得吃了胃疼。
第二种方法是香辣蟹。
准备食材:
食用油,生抽,老抽,鸡精,灯笼椒,花椒,生姜片,食用盐,辣油,螃蟹。
烹饪方法:
将螃蟹洗刷干净,用刀将螃蟹剁两半备用。
锅中放油,等油加热后,将切好的螃蟹放入锅中煎炒。
等到螃蟹壳有点发酥脆即可,出锅备用。
另起油锅,等油锅加热后, 放入花椒,灯笼椒,生姜片。
不断的翻炒爆香,再放入油炸好的螃蟹,加入一点生抽,老抽,盐。
再加一点辣油和鸡精即可出锅,这样一道香辣蟹就完成了。
第三种方法,螃蟹肉炒粉皮。
准备食材:
螃蟹,粉皮,猪油,生姜片,香菜,鸡精,盐。
烹饪方法:
将螃蟹蒸熟后,把螃蟹肉和螃蟹黄,拆出来备用。
把粉皮切成小方块,用水将粉皮煮熟,再过冷水备用。
锅加热放点猪油,等猪油融化后,把螃蟹肉倒入猪油中翻炒,然后倒入粉皮。加点盐,继续翻炒。
两分钟后放点鸡精,即可出锅。
在盘中加一点香菜叶,这样一道蟹黄炒粉皮就完成了。
